2 cups water
1 cup long-grain white rice
1 chicken breast, skinned, boned and cubed
4 Tablespoons soy sauce
4 teaspoons corn starch
1/4 teaspoon ground ginger
1/3 cup water
1 teaspoon sugar
3 Tablespoons oil
3/4 pounds carrots, sliced on the diagonal
1 medium onion, sliced
3/4 pound zucchini, sliced on the diagonal

1. Prepare the chicken and vegetables per above.
2. Bring water to a boil in saucepan with a lid. Add rice. Reduce heat, cover and let cook for 20 minutes.
3. Meanwhile, in medium bowl, combine chicken, two Tablespoons of the soy sauce, 2 teaspoons of the corn starch and the ginger. Toss until well mixed.
4. In a small bowl, combine remaining soy sauce, water, sugar and cornstarch and set aside.
5. Heat 2 Tablespoons of the oil in a wok. Add chicken and stir fry over high heat 3 minutes. Remove with slotted spoon.
6. Add remaining oil to pan and heat. Add carrots, onion and stir fry 3 minutes; add zucchini and stir fry 2 minutes more.
7. Return chicken and add soy mixture. Cook until mixture thickens.
8. Serve immediately with hot rice.
