Whole wheat tortellini (cook first)
Left over chicken – ¼ chicken
Roasted red/orange/yellow bells (3-4 sections, sliced)
Olive Oil, in pan
Lots of sliced garlic cloves (8-10)
½ onion, sliced
Little sweet cherry tomatoes, halved
½ cup sliced mushrooms
1 cup fresh spinach
Couple sprigs fresh basil

Directions:

1. Sauté olive oil, garlic, onions. Add tomatoes,, mushrooms, basil, pepper flakes, more olive oil if needed.
2. Add chicken, bell peppers, tortellini, salt and pepper.
3. Fold in spinach and serve.
