Dough:
2 1/2 Cups Flour
1/2 tsp. Salt
1 Egg at room temperature
1 Cup Warm water

Filling:
3 - 4 Potatoes
Cheez wiz

Directions:
Directions:
1. Cut and boil your potatoes until soft.

2. Strain the potatoes from the water.

3. Mash the potatoes.

4. Add cheez wiz, salt and pepper to taste.

5. Mix together your dough ingredients.

6. Flour the surface you are working on and then roll your dough out until thin

7. Cut into circles

** Tip ** cups make great cutters for this

8. Put a scoop of filling in the center of the circle

9. Fold dough over the filling and seal the edges with water, pressing them down with your finger tips

**Tip** To cook these can be boiled and then fried, baked or my personal favorite, deep fried.

I remember sitting down and making these with my father ( Randy Hiebert ) when I was a kid. We would make the filling and then the dough, turn the kitchen table into a little Pierogi factory line, one of us cutting the circles, another filling them and sealing the edges. We would put them on cookie sheets with a towel over them and freeze them in order to bag them for later. Sometimes this was done in the freezer, usually ( being that we lived in Yellowknife, N.W.T ) we would just put them outside on the back or front porch till frozen.....right next to the pail of Ice cream.
