1 cup rice
5 cups whole milk (part cream)
1/4-1/2 sugar
dash of salt
cinnamon

1 almond with skin removed

Simmer over double boiler until tender. Hide one almond in the pudding and top with cinnamon.

An almond is hidden in the rice pudding. Whoever finds the almond will have an extra serving of good luck for the year!
Nancy Ilk noted when her Mom, Marge makes rice pudding at Christmas, in addition to the almond she buries a penny and a thimble (both wrapped in plastic wrap) in the pudding. Tradition says the one who gets the penny will never be broke and the one who gets the thimble will be the next to get married.
