4 pounds Chicken for Basic Quesadillas see recipe
¾ pound shredded cheddar cheese
¾ pound shredded Monterey jack
cheese
combine with cheddar
2 each red onion julienned
4 each tomatoes diced
16 each wrap plain or flavored
oil to brush on wraps

Directions:
Directions:
For each quesadilla: lay out one wrap, top 1/2 with 1 ounce cheeses, 4 ounces cooked chicken,
1/2 ounce onion julienne, 1 ounce diced tomato and top with 1/2 ounce cheese.
Fold uncovered half of wrap over to cover fillings.
Brush lightly with oil and cook in pan, on griddle or through impinger oven until wrap is lightly
browned, cheese has melted and chicken has reached 165 degrees internal temperature.
Serving Ideas : Offer a Signature Salsa, guacamole, sour cream, black olives, etc. as toppings for
extra charge; or build the cost of toppings into price and let customer help themselves
