6 cups rice
2 ounces oil
3 each onions chopped fine
3 cloves garlic minced fine
1 cup red and green bell pepper diced small
2 quarts chicken broth
1 tablespoon ground cumin
1 cup diced tomatoes
1/3 cup fresh cilantro chopped

Directions:
Directions:
Cook onion in hot oil in saucepan over medium heat, stirring constantly, about 2 minutes, add
peppers and garlic and cook, stirring, about 1 minute more.
Add rice, broth, tomatoes and cumin. Heat to boiling; stir once or twice. Lower heat to simmer;
cover with tight-fitting lid and cook 15 to 18 minutes or until rice is done and liquid is absorbed.
Garnish with chopped cilantro.
