Ingredients:  
cup oil
2 each red onion diced
3 cloves garlic minced
6 each tomatoes chopped
1 each jalapeno chile pepper seeded and diced
2 tablespoons oregano or to taste
2 tablespoons chipotle flavor tabasco sauce
cup fresh cilantro
to taste salt and pepper
1 each lime juiced, to taste

Directions:
Directions:
Heat oil, add onions and saute until soft, do not brown. Add garlic and saute 1 to 2 minutes until
fragrant.
Add tomatoes and jalapeno, bring to a simmer and cook about 20 minutes until tomatoes are soft.
Puree until smooth.
Add oregano, 1/2 of the tabasco and cilantro, adjust seasoning with remaining tabasco, salt,
pepper and lime juice to taste.
Serving Ideas: Serve with fish (or other) tacos.
