16 oz Elbow Macaroni
3 C Milk
1 C Heavy Cream
16 oz Velvetta cheese (cubed)
16 oz Shredded sharp cheddar
8 oz Swiss or Mozzarella or both (I did mention this is mac and CHEESE)
4 oz Romano or Parm grated cheese
1 tsp Black Pepper
2 tsp Onion Powder
6 Slices thick cut bacon cooked and crumbled
1 C Panko Bread Crumbs

Pre heat oven to 350 degrees

Cook Macaroni per instruction on package, drain and rinse then set aside to cool

In large sauce pan over med/low heat add milk, cream, 1/3 of the shredded cheddar, all of the remaining ingredients save the bacon.
stir regularly to avoid scorching. Heat until all cheese is melted and a smooth consistency similar to thick gravy.

Once cheese sauce is smooth, pour over the macaroni, make sure to stir gently and mix well.

Prepare casserole dish with non stick spray. Pour a layer of mac and cheese sauce about 1/2. add 1/3 of cheddar and half of the bacon bites. Repeat. Use remaining cheese and bacon then sprinkle the top with the Panko Bread crumbs and place in oven.

Place uncovered into the preheated oven and cook 35-40 minutes. Make sure the cheese is bubbling up from the bottom and the top is browned
