Ingredients: Lemon zest from 2 lemons 2 T lemon juice 3 lbs flour 1 T baking powder 1 tsp salt 4 eggs 2 C sugar 1 stick melted butter 2 C mesta water (liquid drained from plain yogurt) OR buttermilk/sour milk - recipe follows 1 tsp baking soda 2 tsp nutmeg (optional) 1 tsp vanilla (optional)

Directions:To make buttermilk/sour milk for this recipe combine 2 T lemon juice or vinegar with enough milk to make 2 C liquid and let set for 5 minutes.
1. Combine lemon zest with 3 eggs, butter and lemon juice. Add vanilla if desired. 2. Sift together flour, banking powder and salt and nutmeg if desired. 3. Mix the baking soda with the mesta water/buttermilk/sour milk. Alternate mixing #'s 2 and 3 as you mix with #1 and the sugar.
You will need to use your hand to complete the mixing. Dough should be soft and pliable, but not sticky. Use small amount of additional flour if necessary to handle. Roll with hands on table or plastic sheet making thin strips and tie in knots or other desired shapes, keeping them as close in size as you can for uniform baking. Lightly spray cookie sheets with Pam.
Bake in 350º oven. You must determine baking times from experience. Check after 1/2 hour. They do not bake up very brown. When you see them starting to brown brush very lightly with the yolk from the 4th egg and a little milk. Bake 10 minutes more to obtain desired color. |
