Slow Cooker Tortilla Soup Recipe

1# chicken, cooked & shredded
2 cans Rotel
110 oz. can Enchilada Sauce
1 Med Onion, chopped
1 can Black Beans
2 cloves Garlic, minced
2 C Water
2 C Chicken Broth
1 tsp. Cumin
1 tsp. Chili Powder
1 tsp. Salt
1/4 tsp. Pepper
1 Bay Leaf
10oz. Frozen corn
1 T Cilantro, chopped
7 Tortillas.

1. Mix all ingredients (except Tortillas) into a large crock pot.
2. Cover and cook on Low 6-8 hours (or High 3-4)
3. Before serving, preheat oven to 400,
4. Brush tortillas with oil and cut into strips.
5. Spread strips of tortillas onto a baking sheet.
6. Bake for 10-15 min.
7. Serve soup and sprinkle strips on top.
