Crust:
1/2 cup margarine
1 cup flour
1/4 cup powdered sugar

Filling:
2 tbsp. lemon juice
rind of 1 lemon
2 eggs, beaten
1 cup sugar
2 tbsp. flour
1/2 tsp. baking powder

Glaze:
1 tbsp. lemon juice
1/2 cup powdered sugar or more if needed
1 tbsp. butter, melted

Crust: Mix the margarine, 1 cup flour and powdered sugar. Pat on bottom of greased 8-inch square pan. Bake in a preheated 350º oven for 15 minutes. Remove from oven. Filling: Mix lemon juice, rind, eggs, sugar, flour and baking powder. Pour over crust and bake for 25 minutes more. Cool for 15 minutes and pour glaze on top. Glaze: Mix lemon juice, powdered sugar and melted butter (will be very thin). Spread on bars.

This is different from most lemon bar recipes because after you bake them, you don't just sprinkle powdered sugar on top. Instead, you frost them with a thin, lemony frosting...and believe me...it really does make them better!
