1 cup raw peanuts (If roasted salted peanuts are used, omit salt and add peanuts after first four minutes of cooking.)
1 cup sugar
1/2 cup light corn syrup
1/8 tsp. salt
1 tsp. butter or margarine
1 tsp. vanilla extract
1 tsp. baking soda

Directions:
Directions:
In a 1 1/2-quart microwavable bowl, stir peanuts, sugar, corn syrup and salt. Place in the microwave and cook 7 to 8 minutes; stirring well after 4 minutes. Add butter and vanilla to syrup; blending well. Return to the microwave and cook 1 to 2 minutes more. Peanuts will be lightly browned and syrup very hot. Remove and add baking soda; gently stir until light and foamy. Pour mixture onto lightly-greased cookie sheet. Let cool 1/2 to 1 hour. When cool, break into small pieces and store in airtight container.

This peanut brittle tastes like the one from See's Candies. It is simple to make, since you don't need a candy thermometer. Everyone is always amazed when they find out it was made in the microwave, since it tastes like it came out of a professional candy kitchen.
