For barbecued pork
½ cup hoisin sauce
½ cup ketchup
½ cup soy sauce
3 tablespoons minced garlic
2 tablespoons sugar
6 pounds pork loin, lean, boneless
For garlic sauce
1 tablespoon oil
¼ cup minced garlic
2 tablespoons rice vinegar
2 tablespoons sugar
1 cup soy sauce
1 cup chicken broth
1 tablespoon Tabasco sauce or to taste
¼ cup cornstarch dissolved in 1/2 cup water, or as
needed
For the garnish
1 cup fresh cilantro chopped

Make barbecued pork: whisk together hoisin sauce, ketchup, soy sauce, garlic, and sugar. Put
pork loin in a pan and coat with hoisin sauce mixture. Cover and refrigerate 1 to 2 hours. Roast
pork in middle of oven, turning and basting occasionally with sauce, about 1 1/2 hours, or until a
meat thermometer inserted in center registers 155°F for 15 seconds.
Make garlic sauce while pork is cooling: heat oil in a small saucepan, sauté garlic 1 to 2 minutes
until fragrant (do not brown) add remaining sauce ingredients and bring to a simmer. Add enough
of the cornstarch slurry to thicken slightly, cook for 5 minutes and keep hot (over 160 degrees)
until needed.
