20 pounds chicken wings, R-T-C
for the marinade
2 cups soy sauce
½ cup cornstarch
½ cup hoisin sauce
½ cup sugar
2 tablespoons fresh ginger minced fine
2 tablespoons minced garlic
½ cup lemon juice
for the garnish
1 bunch fresh cilantro chopped

Combine the marinade ingredients and mix well. Pour marinate over wings, cover and refrigerate,
at below 40 degrees, overnight.
Drain wings, place them in a single layer on baking sheets with a little of the marinate and cook
them until done (165 degrees internal temperature for 15 seconds) 30 to 45 minutes. Discard any
unused marinade.
Alternate cooking method: Drain wings, discard marinade, bake in oven until nearly done (about
140 degrees internal temperature), remove from pan and discard juices, deep fry wings one or two
minutes until done (165 degrees internal temperature for 15 seconds) and nicely browned.
Sprinkle wings with chopped cilantro and serve immediately.
