4 oblong dinner rolls white or brown
2 cans chicken flaked with a fork
1/2 c (125 ml) chopped celery
1 1/2 (7 ml) lemon juice
3 to 4 tbsp. (45 to 50 ml) mayonnaise
salt and freshly ground black pepper
chopped parsley

Cut rolls in half. Hollow out rolls leaving 1/2" (1 cm) wall on sides and bottom (trimmings can be used for favorite stuffing). Spread insides with butter. Combine chicken with celery and lemon juice. Moisten mixture with mayonnaise and season to taste with salt and pepper. Pile mixture into roll shells. Sprinkle tops with chopped celery.
