1 c. Whole Wheat Flour
1 c. unbleached White Flour
1/2 tsp. Salt
1 tsp. Baking Powder
1/2 tsp. Soda
2 tsp. Cinnamon
3/4 c. Sugar or 1/2 c. Honey
2 Eggs
1/2 c. Oil
1 tsp. Vanilla
1 1/2 c. grated Zucchini, drained

Directions:
Directions:
Mix dry ingredients. Add liquids and zucchini, and mix just until
ingredients are combined. Pour into lightly greased loaf pans.
Bake at 325º for 45­-55 min. Makes 3-­4 loaves.
