5 1/2 lbs. pounds of small new potatoes red
Olive oil 1/2 cup of extra virgin olive oil
Fresh garlic- mince at least 8 large cloves of fresh garlic
Fresh mint One large bunch of fresh mint chopped fine
Kosher salt 1-2 tablespoons
Freshly ground pepper to taste

Rub and clean small potatoes.
Then cut each in half
Prick potatoes once and then place in microwave ( in small groups) to precook for about 5 minutes.
After all of your potatoes have been precooked , place on greased cookie sheet to brown in oven for about 10-15 minutes at 375 degrees ... or until golden brown.( Do not turn potatoes while cooking)
After potatoes are cooked, and golden brown on the bottom, quickly put all of them into a large bowl to toss
Toss and let stand for about 25-30 minutes or longer before serving. this allows all of the above ingredients to work their magic!

I never use too much olive oil but the most important thing is not to oversalt but you must use FRESH MINT and KOSHER SALT!
And you can always just cook them off in the oven. If you choose to cook off potatoes whole in the oven, leave whole and prick and bake for 2 hours at 350.
