¼ cup oil
8 ounces onions medium dice
8 ounces celery medium dice
8 ounces green bell peppers medium dice
1 tablespoon garlic Minced
¼ cup flour
3 quarts low sodium chicken broth
½ teaspoon cayenne pepper or to taste
1 tablespoon paprika or to taste
1/2 teaspoon black pepper or to taste
2 teaspoons filé powder or to taste
1 each bay leaves
1 quart crushed tomatoes
8 ounces okra Sliced
1 cup rice
1 pound chicken breast, no skin, no bone, R-T-C -- cooked, diced
3 each scallions Chopped

Directions:
Directions:
Heat oil, add onion, celery and green peppers, saute until tender. Add flour, cook about 10 to 20
minutes until flour begins to brown.
Add the chicken stock, spices to taste, tomatoes, okra and rice. Bring to a simmer and cook
about 20 minutes, or until the rice is cooked.
Remove bay leaf, add chicken and return to simmer. Adjust seasoning and add scallions just
before serving.
