8 ounces fresh carrots Diced
1 pound red potatoes skin-on, diced
8 ounces onions Minced
8 ounces celery Chopped
8 ounces carrot peeled and diced
1 gallon water
6 ounces peas
6 ounces corn kernels
1 tablespoon salt
¼ teaspoon ground thyme
¼ teaspoon black pepper
1 tablespoon chopped fresh parsley

Directions:

Combine carrots, potatoes, onions, celery and water in steam-jacketed kettle. Simmer 20
minutes or until vegetables are tender.
Add peas and corn, return to simmer. Add seasonings to soup.
Add parsley. Heat to 180°F.
