2 c. white beans
5 c. cold water
1 med. onion, sliced.
½ Tbsp. salt
2 tsp. apple cider vinegar
1 Tbsp. brown sugar
½ tsp. prepared mustard
¼ c. molasses
1 c. tomato ketchup
Pinch black pepper
¼ lb. bacon (or ½ c. real bacon bits) - optional

Directions:
Directions:
1. Sort and rinse beans.
2. Soak beans overnight in cold water. Drain.
3. Add 5 cups cold water. Cover and heat to boiling. Simmer 30 minutes or until nearly tender. Drain.
4. Place onion slices on bottom of 6 c. casserole dish.
5. Add remaining 7 ingredients in with the beans -- stirring gently to combine -- then pour entire mixture into casserole dish.
6. Add enough water to cover mixture then place bacon on top.
7. Cover with lid and bake in oven at 250°F for 7 hours. (Or in slow cooker on low for 7 hours.)
8. When beans are tender, remove 1 cup of beans and mash. Stir beans back into pot carefully. Cover and continue to bake.
9. Add water as needed to keep beans covered.
10. One hour before serving, remove cover to darken up the beans. Salt to taste. Serves 8.
