1/3 cup light corn syrup
1/4 cup (1/2 stick) butter at room temperature
1 tsp. peppermint extract
1/2 tsp. salt
1 lb. confectioners' sugar

Food coloring: red, or yellow, green, blue

Directions:
Wash hands, (or wear rubber gloves), as you will be handling dough. In mixing bowl, combine corn syrup, butter, peppermint extract and salt. Mix well. Sift in sugar and stir slowly to combine Mix dough together with your hands until a smooth ball can be formed. If your hands get sticky, coat them lightly with confectioners' sugar.

On a piece on wax paper, divide the dough into 4 balls. Add one drop of food coloring (a different color) to each ball. Knead each color into the dough until it is an even tone throughout.

Shape the dough into small balls. Set the balls on wax paper, cookie sheet or tray. Flatten balls by pressing with tines of a fork. Let mints sit out in the air overnight or at least 4 hours to air-dry.
