3 medium size apples - not Mac's or Delicious
3 T sugar
1 t. cinnamon
2/3 c. unsalted butter softened
1 c. sugar
1 1/2 t. vanilla
2 c. flour
1/4 t. salt
4 large eggs

Directions:
Directions:
Peel apples and slice in 1/4 " slices. Combine 3 T sugar with the cinnamon.
Pour over the apples slices and mix well. Let this mixture sit for 1 hour. Stir occasionally to make sure all the apples are covered with the cinnamon mixture. Preheat oven to 300º. With the mixer cream the butter and the cup of sugar until well blended. Add the eggs one at a time blending after each addition. Add the vanilla with the last egg. Combine the salt and the flour. Slowly add this to the batter a little at a time and then mix until smooth.
Prepare a loaf pan by spraying with Pam and putting parchment paper on the bottom. Add the batter to the pan. Insert the apple slices into the batter along the long side in as many rows as possible. Bake 1 1/2 hours until it tests clean in the center. Cool 30 min and remove from the pan. Remove the parchment paper and cool completely.
