2 tbsp vegetable oil
1 yellow onion, chopped
3 cloves garlic through garlic press
2 tbsp curry powder
1 lb. ground turkey
1 egg, well beaten
1 c plain yogurt
2 c diced canned tomatoes
2 bay leaves
cayenne pepper, to taste

Directions:
Directions:
Heat oil in large sauté pan over medium heat. Stir fry onion until soft. Add garlic & sauté for about 30 seconds. Stir in curry powder. Add ground turkey; cook until crumbled & brown.
Meanwhile, combine beaten egg & yogurt. Once turkey is brown & crumbled, add yogurt mixture, tomatoes, bay leaves & cayenne. Simmer about 10 - 15 minutes until well-warmed. Remove bay leaves prior to serving. Serve over rice (we especially like basmati)
