3 cups cooked brown rice
1/2 cup chopped green onions
1 medium tomato, chopped
1/4 cup chopped cilantro
2 tablespoons olive oil
1/2 teaspoon salt
1 can black beans drained and rinsed
1/2 cup salsa
1 tablespoon fresh lime juice
1/3 cup sour cream
1/2 teaspoon cumin
1 1/2 cups shredded cheese

Directions:
Directions:
Toss rice with onions, tomato, cilantro, oil, and salt. Spread in a 9X13 pan. Place remaining ingredients except cheese in a blender or food processor and puree. Spoon evenly over rice mixture. Sprinkle with cheese. Bake for 20-30 minutes or until bubbly around the edges.
