6 medium potatoes
3 lg. hard-boiled eggs, chopped
1 small onion, finely chopped
1 c. celery, finely chopped
1/2 c. green pepper, finely chopped
1 c. mayonnaise
2 tbsp. yellow mustard
2 tbsp. sugar
Celery seed, to taste

Directions:
Cook potatoes until tender, about 30-40 minutes. Drain, cool, peel and chop. Mix next 4 ingredients together with potatoes. Make dressing from remaining ingredients, adding water to obtain correct consistency. Adjust mustard, sugar and celery seed to taste. Pour most of dressing on salad and toss. Add rest of dressing, if necessary (it will absorb).
