4 oz. prosciutto or pancetta
2 medium red onions
1 clove garlic
8 tbsp. olive oil
1 1/2 c. dry red wine
6 oz. tomato paste
4 c. lukewarm water
Salt & pepper

Directions:
Directions:
Finely chop/grind the prosciutto, onions and garlic and place in a heavy dutch oven. Saute in olive oil over low heat for about 20 minutes. Add wine and simmer for 30 minutes. Add tomato paste and 2 cups lukewarm water. Cover and simmer for 1 hour. Season with salt and pepper. Add remaining water and simmer for 1 hour. Reduce to 1-2 cups.
