• 3 tbsp. hard butter
• ½ cup finely chopped onion (Small) - optional
• 3 tbsp. flour
• 2 cups milk – for a richer sauce – 1 cup milk & 1 cup cream
• ¼ tsp. salt
• ¼ tsp. pepper
• ¼ tsp. nutmeg

Directions:
Directions:
1. Melt butter in small saucepan on medium heat. Add onion and sauté for 5 min until soft.
2. Stir in flour until well mixed. Cook and stir for 1 – 2 min until bubbling and grainy – but not brown.
3. Gradually add in ¼ cup milk until combined. Whisk in remainder of milk, salt and pepper until mixed.
4. Simmer uncovered on low for about 10 min, stirring occasionally, until sauce is thickened.

Alternatives
• Mornay
o 3 tbsp. Parmesan cheese
o 3 tbsp. of cheddar or Gruyere cheese
o 1 large egg yolk
Goes great with veg’s, fish, seafood, eggs, chicken or red meat

• Mustard
o 2 tbsp. of Dijon Mustard
Goes great with Veg’s fish, seafood, chicken or red meat

• Herb
o 2 tbsp. each of fresh parsley and basil.
Goes great with Veg’s, fish, seafood, eggs, chicken, red meat or pasta.
