3-4 medium chicken breasts
2 cans cream of chicken
1 c. Sour cream
1 cup grated mozzarella cheese (or cheddar but mozzarella is better)
1 T poppyseeds
1 sleeve ritz crackers
1/2 cube butter

Directions:
Directions:
Cook chicken thoroughly however you want (boiling is pretty easy) and cut into little cubes. In 9 by 13 pan, mix cream of chicken, sour cream, poppyseeds, and cheese. Then mix in chicken. Melt butter in a bowl and add crushed crackers (I usually do it in the sleeve, they don't have to be crumbs) and sprinkle on top of chicken mixture. I usually throw a little more grated cheese on top. Bake for 20-25 minutes at 375 till all bubbly. (if crackers start to burn on top, cover with tin foil).
