STARTER:
1 15 oz. can pineapple chunks, drained
1 15. oz. can apricot halves, drained
1 15. oz can sliced peaches, drained
1 10 oz. jar maraschino cherries, drained.

CAKE
1 pint starter
1 16. oz. can lite sliced peaches
1 20 oz. can Pineapple tidbits (cut chinks in 1/2)
2 6oz. jars maraschino cherries
7 1/2 cups sugar
2 boxes butter golden cake mix
2 boxes instant vanilla pudding
8 eggs
1 1/3 cup cooking oil

The next ingredients are optional or can be cut in half.
2 cups raisins
2 cups walnuts
2 cups pecans
2 cups coconut

To Make Starter;In large glass jar combine drained pineapple,apricots slices,peach slices and maraschino cherries. Add 1 1/4 cup brandy and 1 1/4 cup white sugar. Stir gently with wooden spoon. Cover and let stand at room temperature for 3 weeks, stirring gently twice a week. Drain and reserve liquid. The liquid is the "starter" for the Friendship Cake. The fermented fruit can be used for other recipes or as topping for ice cream.

FRIENDSHIP CAKE
DAY ONE
Pour starter into glass gallon jar. Add can of diced peaches and juice(cut each piece into 4 pieces). Add 2 1/2 cups sugar. Stir, cover jar loosely. Keep at room temp. Stir every day for 10 days

DAY TEN
Add one can of pineapple tidbits and juice. Add 2 1/2 cups sugar. Stir every day for 10 days more. Fruit will foam when stirred.

DAY TWENTY
Add 2 jars of maraschino cherries.(drained). Cut each in half. Add 2 1/2 cups sugar. Stir daily for 10 more days. These are the last 10 days. The cherries will give the juice its pinkish color back.

DAY THIRTY ONE
You will now bake your two cakes. Preheat oven to 300ºF. Grease and flour 2 tube or 2 Bundt cake pans. Drain fruit into a large bowl. Pour juice into 3 pint jars.
Pour one box of cake mix,one box of pudding,4 eggs,2/3 cups oil and 1/2 of the drained fruit into a large bowl.Stir with a spoon only until well mixed, Then stir in 1 cup each of raisins, walnuts,pecans and coconut. Pour into one of the pans and bake 70-90 minutes until insert comes out clean. Repeat for second cake. It is best to bake one cake at at time.

NOTES; The 3 pint jars of juice are the starters. One for you and two for your friends. NEVER refrigerate the starters. DAY ONE must start within 3-4 days after the fruit has been drained. This cake is also known as Friendship Cake. It may be frozen . 1 cake

This is not REALLY labor intensive..it just takes a long time to get to the finished product. Hardest part is making the starter starter. I recall that it was an absolutely delicious cake. The recipe came from my mom and we had it at a brunch at Christi's ..The day we drank champagne and were "dancing on the deck".
