Ingredients:

1-cup oil
1-cup brown sugar
3 eggs
1 1/3 SR Flour
1 teaspoon Bi carb
2 teaspoon Cinnamon
Salt
2 large carrots grated
¾ cup walnuts

Directions:
Directions:
Preheat oven to 180 C
Beat oil, sugar and eggs until combined
Add sifted flour, bi-carb, cinnamon and salt
Fold in carrots and walnuts
Pour into a well greased 20cm tin
Place on a low rack and bake for 1 hour.
