1 package boneless, skinless chicken thighs
2 T. brown sugar
2 T. soy sauce
2 qts. chicken broth
1 1" piece of ginger, cut into matchsticks
12 oz. ramen noodles
6 oz. spinach
4 oz. shitake mushrooms, sliced
1 T. sesame oil
2 stalks green onions, sliced

Mix together brown sugar and soy sauce. Add chicken thighs and toss to coat. Bake chicken thighs at 350 for 20min. In a pot, heat chicken broth and ginger to a boil. Add ramen noodles. During last 2 minutes as directed, stir in spinach, mushrooms and sesame oil. Cook for an additional 3 minutes. Divide among 4 bowls. Slice chicken and top each bowl with chicken and green onions.
