4 boneless, skinless chicken breasts
salt and pepper to taste
1 T. olive oil
4 medium tomatoes, diced
3 T. minced red onion
2 cloves garlic, minced
6-8 basil leaves, roughly chopped
4 1/2" thick sliced fresh mozzarella
4 T. grated parmesan

Preheat oven to 350. Heat large oven-proof saute pan over high heat. Season both sides of chicken with salt and pepper. Sear the chicken in the olive oil over high heat for 2 minutes. Flip chicken and place the entire pan in the oven to bake for 20 minutes. Meanwhile, in medium bowl, combine tomatoes, red onion, basil and garlic. Season with salt and pepper to taste and mix well. Remove chicken from oven, top with the tomato mixture and one slice of mozzarella cheese per breast. Bake an additional 3-4 minutes or until the cheese melts. Remove from oven and immediately top with parmesan.
