1/2 cup plus 1 Tbl. unsalted butter
1 cup cold water
2 tsp. salt
1 cup all purpose flour
4 eggs
freshly grated nutmeg
2 large potatoes,cooked and mashed

Oil for deep frying

Directions:
Directions:
Combine butter,water and salt in large saucepan. Place over low heat and stir until butter is melted. Remove from heat and stir in flour. Return to heat and stir constantly to let mixture dry,about 20 seconds. Add eggs one at a time and beat on high speed of electric mixer. Season with nutmeg to taste. Measure 2 1/2 cups potatoes and add to mixture,beating well.(Can be prepared one day ahead to this point and refrigerated)

Add oil to depth of 3 inches in deep fryer or pot. Heat to 375ºF. Add potato mixture by small rounded tablespoons and fry until golden brown. Remove with slotted spoon and drain on paper towel- lined platter.(Do not let sides touch) until ready to serve. Pommes can be cooked 45 minutes ahead.

Get ready to make these for a nice winter's treat. They sound cozy..and easy...always be careful with the hot oil. The mixture has to be very dry when you place it in oil or it will spatter! This recipe was typed on my typewriter( I recognize it now) like handwriting.
