Prepared Graham cracker crust-9"

filling-
3 cups water
1 1/2 cups sugar
1 tsp. vanilla
3-4 ripe peaches,peeled
1 8oz. pkg. cream cheese
2Tbls. sugar
1 1/2 Tbl. Peach syrup (from poaching peaches)
2 Tbls. minced,peeled ginger

Filling-
Combine water ,sugar and vanilla in large saucepan. Bring to boil and cook until syrupy,about 4-5 minutes. Add peaches and reduce heat to low. Poach gently,turning occasionally,until tender. Allow to cool in syrup then slice and drain thoroughly on paper towels.
Beat cream cheese with sugar and peach syrup until smooth.

Tart
Mix in 1 Tbl. ginger. Spread cheese mixture over bottom of graham cracker tart shell and arrange peach slices in attractive design on top.

Glaze; In small saucepan melt 1/4 cup apple jelly(or use berries in season) and brush over peaches to glaze. Sprinkle with remaining ginger. Chill well.
