3 pound of beef short ribs
1 8oz can of diced tomatoes or 1.5 cups cherry tomatoes
1 cup of red wine
1/2 diced white onion
1 garlic clove
1 tbsp olive oil
2 tsp crushed red pepper

Directions:
Directions:
Heat olive oil in a pan and sear all sides of the beef short ribs.
After ribs have been seared add them to the crock pot with any oil or drippings left in the pan.
Cover ribs with wine, crushed red pepper, garlic, tomatoes and onion.
Heat on low for 8 hours or high for 4 hours until ribs tender.

We like to shred the rib meat and serve it and the sauce over roasted cauliflower and parsnips or potatoes.
We have also added 2 cups of chopped kale to the crock pot to add some greens:)
