2 c. water
1 c. quinoa
10 leaves kale, cut into real small pieces
3 tbsp. olive oil
2 tbsp. lemon juice
1 tsp. Dijon mustard
1 large clove garlic, minced
1 tsp. cracked pepper
½ tsp. ground sea salt
1 c. pecans, chopped
1 c. currants ( I use craisins)
¾ c. feta cheese, crumbled

Directions:
Directions:
Boil water in saucepan, stir quinoa into the boiling water. Reduce heat to medium low, cover, and cook until water absorbed, about 12 minutes.
Put kale in mixing bowl.
Whisk olive oil, lemon juice, Dijon mustard, garlic, pepper and salt together. Drizzle over kale.
Add cooled quinoa, pecans, currants and feta cheese; toss together.

I've taken this to dock parties, and the dish comes home empty. Even though it's kale, with all the other stuff, it tastes great!
