5 Eggs (separate white from yokes)
1 C. Buttermilk in a 2 cup container (as it will bubble up)
1 Tsp. Baking Soda
½ C. Butter (1 stick)
½ C. Shortening
2 C. Flour (Tip: Reduce flour by 3 Tbs. for low altitudes and shift flour)
1 Tsp. Almond Extract or Vanilla Extract
1 C. Pecans finely chopped
1 C. Coconut shredded

• Beat egg whites until stiff and set aside in separate bowl.
• Add baking soda to buttermilk – set aside
• Cream shortening and butter, add sugar gradually.
• Add egg yolks one at a time or beat the yolks and pour into batter slowly
• Alternate pouring flour and buttermilk into batter slowly until mixed
• Add Almond Extract or vanilla
• Fold in egg whites
• Gently stir into batter coconut and pecans into batter with lg. spoon

Grease cake pans with shortening and flour – makes enough batter to make three 9” pans, if you want a triple-decker cake, or use 2 9” pans filled above half. Will also make a sheet cake 9” x 13”, but it is not as moist and beautiful. Bake at 325 degrees for 30 minutes or until cake does not stick to toothpick


CREAM CHEESE FROSTING
½ C. Butter (1 stick)
1 8 oz. Cream Cheese softened at room temp.
1 lb. box Powered Sugar
1 Tsp. Almond Extract or Vanilla Extract

Use mixer to cream butter and cream cheese, then mix on a slow speed the powered sugar, or it will fly all over you.

For high altitudes, do not sift flour and use the full 3 cups

This recipe was a secret never given out to just anyone, until I received it in the 80s from the lady who made us cakes where I worked at the Casper Wyoming Chamber of Commerce.

This is a southern recipe that has a lot of steps, but a triple layer cake is very moist, and worth every extra step. The flavor is beyond anything you can buy in a store or get from a box.
