2 large green peppers, seeded and diced
1 large onion,chopped
1/2 cup vegetable oil divided in half
1 lb. lean ground beef
1 can (8oz.) whole kernel corn,drained
2 cloves garlic,minced
1 1/2 tsp. salt
1/4 tsp. fresh ground pepper
2-3 Tbl.chopped hot pepper (fresh or canned)
crushed red pepper (to taste)
3/4 cup seedless raisins
1/4 tsp. oregano
1/4 cup cider vinegar
1 can (16 oz.) refried beans
12 flour tortillas
2 cups shredded cheddar cheese
2 cups sour cream
1/4 cup pimiento -sliced olives

Directions:
Directions:
Saute green pepper and onion in 1/4 cup oil until softened but not browned.Add ground beef and stir occasionally, until lightly browned.Skim off excess fat. Add corn, garlic, hot peppers,raisins, oregano,vinegar and simmer . Bring gently to a boil. Reduce heat,cover and simmer for 20 min. Stir frequently until meat is browned but not burned. Remove from heat and set aside.

In a large skillet heat remaining 1/4 cup oil. Carefully add the refried beans and cook, stirring occasionally until oil is absorbed and beans are a little crusty.

Preheat oven to 350º.

Grease a 13x9" baking pan. Place some of the bean mixture on a tortilla. Top with ground beef mixture. Fold filled tortillas over and place seam side down, in prepared baking dish.
Stir the sour cream and 1 cup of cheese together and top tortillas. Sprinkle remaining cheese on top.* Bake in 350º for 20 minutes. Top with sliced olives.

The original of this recipe is very damaged and I was unable to read. There may be some incorrect directions. (Ingredients were all clear). If anyoen has a better copy of this let me know so I can check instructions. It was my first time making a dish with flour tortillas and I really like it. The raisins give it an extra "pop".
