1 (3-4 lb. ) rolled boneless pork loin roast
1/2 tsp. freshly ground black pepper
1/2 tsp. garlic salt
Mesquite or hickory chips
2 (12 oz. cans of beer)
2.23 cups burgundy wine

Mahogany Sauce
Spiced Peaches
Garnishes;leaf lettuce,cinnamon sticks

Directions:
Directions:
Sprinkle roast with pepper and garlic salt.
Soak mesquite chips in water 30 min.
Prepare charcoal fire in smoker,let burn 20 min.
Place mesquite on coals. Place water pan in smoker;add beer and wine to pan.

Place roast on food rack. Cover with smoker lid;cook 2-3 hours or until meat thermometer registers 155ºto 160º when inserted in center. Serve with Mahagony Sauce (attached) and SPiced Peaches (attached). Garnish, if desired.
(A rolled boneless pork loin roast is two pieces of loin packaged together and usually tied with string or netting).

I dont remember making this recipe is from Food and Hospitality Magazine dated June 1991.
