2 1/2 qts. kernels cut from cob (about 20 ears of corn)
1 c. chopped green bell pepper
1 c. chopped red bell pepper
1 1/4 c. chopped onion (4 medium)
1 c. chopped celery
1 1/2 c. sugar
1 1/2 Tbsp. mustard seeds
1 Tbsp. salt
1 tsp. celery seeds
1/2 tsp. turmeric
2 2/3 c. vinegar (5%)
2 c. water

Boil corn for 5 minutes. Plunge into cold water. Cut kernels from cobs; measure. Combine all ingredients; simmer 20 minutes. Pack into clean, hot pint jars, leaving 1-inch head space. Make certain vinegar solution covers vegetables. Adjust lids. Process in boiling water bath 15 minutes.
Remove jars from canner and complete seals unless closures are self-sealing type.
Yield: 6-7 pints
