1 lb. pasta, cooked
1 lb. chicken tenders
2 T butter
12-16 ounces Velveeta
1 cup milk
1 10-ounce can Ro-tel tomatoes & chilies
1 10-ounce cream of chicken soup
1/2 tsp cumin
2 T Sriracha or other hot sauce
1 cup Panko bread crumbs
1 cup grated cheese
Salt and pepper, to taste
Parsley and/or crushed red pepper as garnish

1. Cook & drain the pasta.
2. Spray a grill or frying pan with cooking spray, cook the chicken tenders and then cut them into bite-size pieces.
3. While the pasta is cooking, spray a dutch oven or stock pot with cooking spray and melt butter over med-high heat. Add the Velveeta, Ro-tel, soup, milk, hot sauce and cumin, stirring occasionally until it melts together. Add the chicken. Stir to combine. Add the pasta. Season with salt and pepper, to taste.
4. Spray a casserole dish with cooking spray and put the chicken spaghetti in it. Top with grated cheese and bread crumbs.
5. Cook at 350ºF for about 30 minutes or until the cheese is bubbling & the bread crumbs brown a bit.
6. Garnish with parsley or crushed red pepper or more hot sauce.
