1 chicken, cut up, or 4 leg quarters

1 bay leaf
1 celery stalk with leaves
1 1/2 cups flour
3 tbsp. shortening
1 egg, beaten
4 tbsp. boiling water
Pepper to taste

Directions:
Directions:
Place chicken pieces in saucepan, cover with water, season with salt, bay leaf and celery, and boil until tender. Remove chicken and strain broth, returning broth to pot. Remove chicken from bones and cut into bitesize pieces.
Sift flour and 3/4 tsp. salt together; cut in shortening with pastry blender or two knives until very small pieces. Stir in egg, then stir in boiling water. Knead a few times with hands; divide in half. Roll thin on floured board, cut in 3/4-inch strips, cut strips in 1-inch pieces. Bring broth to boil; reduce heat to medium. Drop strips into broth, one at a time. Thicken with a little flour in water if desired. Season with pepper. Simmer about 10 minutes until dumplings are tender; add cut-up chicken.
