2 Tbsp olive oil
2-3 small red potatoes, sliced thinly
Half an onion, chopped
Baby spinach - 2 or 3 handfuls (it wilts)
Green, red, yellow, or orange peppers, diced
6-8 eggs
Shredded cheddar cheese, about one cup

Directions:

Heat olive oil in a medium skillet over medium heat. Place potatoes and onion in skillet, season with salt and pepper, cover, and cook about ten minutes, until tender but firm. Mix in spinach, vegetables, and whatever else you've got (mushrooms, broccoli, sausage crumbles - clean out fridge!) continue cooking until spinach is wilted.
In a medium bowl, beat eggs and pour into skillet over the vegetables/meat. Sprinkle with shredded cheese. Reduce heat to low, cover, and cook about 7-9 minutes or until eggs are set.
