2 cans of white beans
6 c. chicken broth
1 med onion, chopped
1-2 T. olive oil
4 cloves garlic, minced
8 oz can diced green chilies - optional
1/2 tsp. dried oregano
2 -3 T. ground cumin
1/2 tsp. ground red pepper
4 c. cooked chicken thighs, chopped
salt and pepper to taste
Monterrey Jack or mozzarella cheese, shredded

Directions:
Saute' onion and garlic in 1-2 T olive oil, stirring constantly. Drain beans and place all ingredients except cheese in a soup pot. Bring to a boil and reduce heat. Cover and simmer for at least one hour. Serve with cheese. Can be made in a crockpot.
