1 c whole wheat flour
1 c all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 c brown sugar
1/2 c chopped walnuts
1/2 c currants
2 eggs
1/3 c oil
3/4 c orange juice
1 c finely grated zucchini

Directions:
Directions:
In a large mixing bowl combine the 2 flours, baking powder, baking soda, salt, cinnamon, nutmeg, brown sugar, walnuts and currants. In a small bowl beat eggs then add oil and orange juice. Beat well. Add liquid ingredients to dry ingredients. Stir just to moisten. Fold in zucchini. Fill greased muffin pans 3/4 full. Bake at 375ºF for 20 min or until they test done.
