500 ml corn flakes crushed to 250 ml crumbs
250 ml whole wheat flour
15 ml baking powder
2 ml salt
5 ml ground cinnamon
2 ml ground nutmeg
2 ml ground allspice
125 ml firmly packed brown sugar
1 egg lightly beaten
175 ml milk
50 ml vegetable oil
375 ml grated carrots
125 ml raisins

Directions:
Directions:
Stir together corn flake crumbs, flour, baking powder, salt, spices, and brown sugar. Combine egg, milk, and oil. Add to dry ingredients, mixing just until moistened. Stir in grated carrots and raisins. Spoon into greased muffin tins to about 2/3 full. Bake at 190ºC/375ºF for 18 to 20 min or until lightly browned.
