1 stick (1/4 lb.) butter
1 cup sugar
4 eggs
1 cup drained pineapple
5 slices white bread (chopped in small cubes)

Can do 1 day ahead! Cream butter & sugar, add eggs (beat in one at a time), stir in 1 cup drained pineapple (#2 can crushed pineapple). Fold in 5 slices white bread chopped in small cubes. Pour into greased 1½ qt. casserole and bake at 350º for 45 minutes to 1 hr.

You can also use canned peaches, cut in small pieces in place of pineapple. If bread is really dry, you can add some half & half or milk to the desired consistency. Beth doubles recipe & puts in 9x13 cake pan.

Beth made this for us at Thanksgiving time in 2011 when Cal was quite ill with his cancer. We had a wonderful family gathering at their home & this was such a great dish that she introduced! Heather & kids & Autumn came with us also to celebrate Thanksgiving with all of us.
