2 c cooked quinoa
2 eggs
2 egg whites
1 c shredded zucchini
1 c. finely shredded sharp cheddar cheese
1/2 c diced ham
1/4 c chopped parsley
2 T. grated Parmesan cheese
2 green onions
1/4 tsp salt
1/4 tsp pepper

Preheat oven to 350. Add all ingredients in large bowl and mix well to combine. Spray a mini-muffin tin with non-stick sprat and spoon into muffin cups filling 80% full. Bake 15-20 minutes or until edges are golden brown. Let cool at least 5 minutes in the tin before removing. Do not underbake or they will stick in pan. Great for quick to go breakfast, snack or veggie with dinner.
