2 T butter
6 eggs
1/3 c sour cream
1/3 c milk
1/2 tsp salt
1/8 c chopped onion, green pepper, red pepper EACH
1/4 c sliced sautéed mushrooms or canned ones
3/4 c. shredded Colby cheese

Directions:
Directions:
Preheat oven to 325. Melt butter in 6 x 6 baking dish. In medium bowl, beat eggs, sour cream, milk, and salt. Stir in veggies and cheese. Pour into buttered baking dish and bake uncovered 35-45 minutes until souffle is golden brown and middle is firm.

This recipe can easily be doubled or tripled....just use larger baking dish.
