1/4 c butter
1 small onion, chopped
1 small green pepper, chopped
2-3 medium tomatoes, chopped
1-24 oz frozen has brown potatoes
12 eggs, beaten
1/2 lb cubed ham or 1/2 lb. thinly sliced ham or 1/2 lb cooked crumbled bacon or 1/2-1 lb. cooked sausage
3 c. shredded cheddar cheese

Directions:
Directions:
Melt butter in bottom of 9 x 13 pan. Spread frozen potatoes in bottom of pan
Sprinkle chopped veggies over potatoes.
Add salt & pepper to taste.
Sprinkle meat on next layer.
Note: At this point you may continue or casserole may be refrigerated overnight.
Sprinkle 2/3 of cheese over casserole. Pour beaten eggs over casserole.
Bake @ 350 for 45 minutes. Remove from oven and sprinkle remaining cheese.
